Couscous sushi with smoked salmon

Makes six people


The ingredients

  • Two hundred twenty-five grams of smoked salmon slices.
  • Low-salt soy sauce for dipping.
  • Six slices of dried roasted nori.
  • Two green onions, cut into small pieces.
  • Two hundred grams of couscous.
  • 2 tablespoons each of rice vinegar and mayonnaise.
  • 1 piece each: chopped lengthwise seeded cucumber and avocado, peeled and sliced.
  • A small spoon of Nigella sativa.
  • Pinch salt to taste.
  • Two teaspoons of wasabi paste.

To decorate:

  • Little pickled Japanese ginger.


How to prepare

  • Prepare the couscous according to the instructions on the tray in order to cook it a little more in order to become a little sticky.
  • Then drain the cooked couscous in a bowl.

  • Add: Nigella sativa, green onions, rice vinegar, and salt, stir the ingredients together well, then leave the mixture until it becomes cold.
  • Place a slice of nori seaweed on a bamboo sushi mat, then put a small amount of water in the hand.
  • Spread the couscous mixture on the seaweed slice in a thin, flat layer, leaving a distance from the far end of the nori slice, not covered with the couscous mixture.
  • Put smoked salmon and avocado pieces on the couscous, then add the cucumber horizontally over about a third of the couscous.
  • Roll the sushi tightly with a bamboo mat to help roll it while the filling is completely enclosed.

  • Trim the ends of the sushi rolls with a slightly damp knife, then cut each roll into six pieces.


Preparing a wasabi dip with mayonnaise:

  • Mix the wasabi and mayonnaise well, then stack the sushi on plates and serve it with a low-salt soy sauce and wasabi mayonnaise.


Sushi

The ingredients

Rice Ingredients:

  • Two cups of rice.
  • Four hundred grams of water.
  • Four tablespoons of vinegar.


Filling Ingredients:

  • Chunks of salmon fillet.
  • A little lean cheese.
  • Two pieces of avocado.
  • an onion.
  • Roasted sesame.
  • A little each: a little dill sticks, a little fresh ginger, a little soy sauce.


How to prepare

  • Bring a circular pot made of wood, then put the boiled rice in it, add the rice vinegar, and stir the ingredients together.


Preparing the filling:

  • Chop the silicon into small cubes, chop the green onions into rings, and mash the ginger.
  • Add: ginger, soy sauce, lemon juice, avocado, and green onions, and stir the ingredients together.


Preparing a second filling:

  • Put each of garlic, corn, tuna, and a pinch of black pepper in a saucepan and mix the ingredients together.
  • Put the rice on a plate that contains circles intended for sushi, and if it is not available, shape the rice into circles.
  • Using wooden tongs, place the smoked salmon slices on the rice circles, then place the onion slices.
  • Put the second filling mixture on the rice and decorate the plate with pomegranate seeds and sprinkle with roasted sesame, then serve.


Quinoa Sushi Rolls

Preparation time: 20 minutes

Cooking time: 20 minutes

Makes four people


The ingredients

  • A little each: quinoa, water, rice vinegar, honey, and salt.



Filling Ingredients:

  • Small pieces of avocado, cucumber, and mango.


To serve:

  • A little soy sauce.


How to prepare

  • Put the quinoa and water in a medium saucepan and put the saucepan at a high temperature until the mixture boils.
  • Then reduce the temperature and cover the saucepan, and leave it at a low temperature until the quinoa is cooked for a period of 15 to 20 minutes.

  • Mix rice vinegar, honey, and salt in a small saucepan over medium heat let it become warm, then add quinoa.
  • Remove the quinoa from the heat and leave it until completely cold.

  • Putting the bamboo mat on a flat surface, then placing one sheet of nori.
  • Then spreading a third of the quinoa on the nori and placing each of avocado, cucumber, then mango in the center of the quinoa.

  • Lift the tip of the bamboo mat with your fingers from the side where the ingredients were placed, then press the roll which is inside the bamboo mat very tightly.
  • Take out the sushi roll from the bamboo mat, leave it for a few minutes, then cut it and serve it with the soy sauce.
